Forecast calls for highs over 100 this week in Texas but the oppressive summer heat arrived weeks ago. During the summer I hate heating up the house with the oven & stove to cook dinner so my go to is the grill or crockpot. I love this recipe for two reasons.
1) It is insanely easy.
2) I can use it to make so many different meals!
- 2 pounds boneless, skinless chicken (I have used thighs and breasts before)
- Envelope ranch dressing mix
- 1/4 cup butter
Dump your chicken into the crockpot.
Sprinkle dressing mix over the chicken, turning to coat evenly on all sides.
Place pats of butter across tops of chicken.
Cook on low 3-4 hours
Depending on how you want to use the chicken you can shred it, cut it into bite sized pieces etc.
I've made chicken wraps with lettuce & tomatoes, used it in a salad, made chicken nachos and in tacos all without adding to the heat index outside.
